Slimpodder Linda Warner has come up with a great way to prepare a big batch of lunches all at once, and save herself time in the kitchen. - 1 bag of red lentils
- 2 onions chopped
- 2 cloves garlic crushed
- 1 chilli chopped
- Approx 3.5 litres stock (chicken or veg)
- 1 tablespoon of tomato puree.
Gently sweat the onions until translucent.
Add the garlic, tomato puree and chilli .
Stir and then add the lentils and stock.
Bring to the boil then simmer for about 30mins.
Check the seasoning and add salt if needed.
When it is cool I ladle it into plastic cups as these hold about the right amount for one portion. It is then easy to freeze and defrost as needed.
