Avocados are full of healthy unsaturated fats, and are also rich in Vitamin E. Eggs are full of protein, and also contain betaine which can help to protect against heart disease.
Here’s how to make baked eggs in avocado.
Ingredients (per person)
- 1 ripe avocado
- 2 fresh eggs
- Pinch of pepper
- Pinch of chopped chives or chillies.
Method
Preheat the oven to 200C. Slice the avocados in half, and take out the stone.
Scoop out some more of the flesh from the centre so that the egg will fit in the hole.
Pop the avocados in a baking dish, the smaller the better so they don’t roll around!
Crack each egg into each avocado half.
Place in the oven and bake for 15 to 20 minutes. Cooking time depends on the size of your eggs and avocados. Make sure the egg whites are cooked thoroughly.
Remove from oven, then season with a garnish of your choice. Enjoy your healthy breakfast!
